I'm really getting into these rest days - it's the part I'm most consistent with so far. I'm looking forward to seeing everybody tomorrow in Clinton! I can do two miles. I can, I can, I can.
Here's my fall back supper when I'm cooking only for myself. Steam a handful of broccoli, cut up in bite-sized pieces. Cook 1/2 cup of pasta. I tried the omega-3 enriched multi-grain stuff this week, and it was pretty good. Drain the pasta, put it back in the pan with enough spaghetti sauce to coat everything. Heat it up, then pour it in a bowl, add the broccoli, sprinkle with some pine nuts or slivered almonds, and add a good dollop of cheese. I like cottage cheese with my spaghetti, but you could use freshly grated romano, parmesan, swiss, cheddar. I could eat this every night of the week.
