Sleeping in tomorrow! Got all my walking done this morning, and then sometime during my ride to work all my sore muscles from yesterday came alive. Got to keep moving to loosen everything up. I've been having some trouble with one ankle, but not when I run - only when I drive. Not sure what's up with that.
Survivor night was good. I love that I have a close group of friends that gets together regularly for any old excuse. In addition to the chicken, I halved some sweet potatoes, rubbed them with olive oil, and baked them on the grill for about 30 minutes. They were creamy on the inside, and crispy on the outside.
Tomorrow my quilting group will get together, and I'm going to make vegetable tortellini alfredo. It's a little higher fat because of the alfredo sauce, but it's easy and good.
VEGETABLE TORTELLINI ALFREDO: Chop up a couple cups of vegetables in bite-sized pieces - broccoli, cauliflower, onion, sweet bell pepper, squash, whatever you've got. Steam them until they're tender but not limp. Cook a bag of cheese & spinach tortellini (Kroger carries Bertolli, and it's great) according to package directions. Mix the vegetables, tortellini, ~1/3 cup sliced almonds or pine nuts, and enough alfredo sauce to coat everything.
